Vegetarian Coconut Curry Rice

Today I'm going to try a new dish, since I have no meat, it'll be a vegetarian dish.

1 can of Coconut milk (unsweetened)
3 tsp Curry powder
1 Tbsp Garlic poweder
1 cup washed Rice (I'm using Basami)
1 cup cold water
1 tsp salt
1 bag of frozen Broccoli florets
1 can (drained) green peas Chickpeas)
4 Tbsp butter, melted in pan
2 tsp olive oil

Mix spices and cook rice in rice cooker (or Instant Pot for 12 minutes. Cook broccoli in butter, once thawed, add peas.  Then combine rice once everything is cooked.  Mix gently. Enjoy!

Wait, so at which point is the coconut milk being applied? 

Maybe I'm just bad at understanding cooking instructions, but that seems a little unclear to me.

I just used the coconut milk as the liquid base in the rice cooker.  I added enough water to get me to the 2 cup mark of liquid.

Ahh, so pretty much what I expected. 

That said, I know I've had bad experiences with rice cooked in fatty liquids (other than the eggs used for fried rice)... is there a special trick to this kind of stuff?

Define "bad experience". 😊

Of course my rice cooker it's an Instant Pot so it's pretty smart it just defaults the 12 minutes and then I let it depressurize and by the time it's done 15 minutes later it's perfect.

Grew an arm and stabbed me with a fork. 


(I mean I didn't like the taste, is all.  But it also didn't taste like how I "expect rice to taste", including being radically far from fried rice, so that's why I'm thinking it might be more of a botched cooking attempt on my part rather than just a matter of preference.)

It also depends on the type of rice you cook.  I used Basami rice, the kind you find in typical Indian food.

(Also, the secret to good fried rice is to cook the rice and refrigerate for 24 hours before frying it.)  ;)
