Potato and Brocolli Soup

This is kind of a "we got all these leftovers" or "we need to use these"... recipes.

Servings:  About 4
Cook Time:  About 35 minutes.

7 whole potatoes, skinned and cubed.
1 package of frozen broccoli crowns.
48 oz Chicken broth
1/2 cup heavy cream
1/2 cup milk
1/3 cup of mozzarella cheese
1 cup grated Parmesan/Romano cheese
3 Tbsp garlic powder
1 tsp Worcestershire sauce
1/2 tsp cayenne pepper
1/2 tsp black pepper
pinch of salt
some basil

Heat chicken broth in pot with potatoes over medium high heat.  Let it cook for about 20 minutes.  Then add the milk and cream.  Turn down to a simmer and cook for about five minutes.  Add the spices and brocolli.  Let it cook for another five minutes.  Add the cheese, turn off heat and stir.  Let sit for about three to five minutes.  Serve.  Yum!

This has got to be one of the best soups I've made.  Next time, I'll probably add some cauliflower and bacon to it!

We've made something similar as well. I don't like creamy soups so my husband makes sure to not blend them up too much.
